Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- confectioners sugar - 3 c
- baking soda - 1 tsp
- vegetable oil
- shredded coconut - 1 c
- butter or margarine, softened - 6 Tbsp
- drained, crushed pineapple - 1 c
- chopped nuts, divided - 1 c
- finely grated carrots - 2 c
- Add eggs, oil, carrots and vanilla
How to make carrot cake:
Combine dry ingredients. Add eggs, oil, carrots and vanilla. Beat until combined. Stir in pineapple, coconut and 1/2 cup milk. Pour into a greased 13 x 9 x 2-inch baking pan. Bake at 350° for 50 to 60 minutes until cake tests done. Cool. Frost wiRecipe categories: Desserts, Cakes, Carrots.
