  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour - 2 c
  • confectioners sugar - 3 c
  • baking soda - 1 tsp
  • vegetable oil
  • shredded coconut - 1 c
  • butter or margarine, softened - 6 Tbsp
  • drained, crushed pineapple - 1 c
  • chopped nuts, divided - 1 c
  • finely grated carrots - 2 c
  • Add eggs, oil, carrots and vanilla

How to make carrot cake:

Combine dry ingredients. Add eggs, oil, carrots and vanilla. Beat until combined. Stir in pineapple, coconut and 1/2 cup milk. Pour into a greased 13 x 9 x 2-inch baking pan. Bake at 350° for 50 to 60 minutes until cake tests done. Cool. Frost wi
