Ingredients/Components

  • pkg - 19 oz
  • water - 1/2 c
  • strong freshly made coffee - 1/4 c
  • shortening - 2 Tbsp
  • packed brown sugar - 1/2 c
  • eggs - 2 item
  • soft bread crumbs
  • baking powder - 1 tsp
  • cinnamon - 1 tsp
  • cloves - 1/4 tsp
  • nutmeg - 1/4 tsp
  • raisins - 1 c
  • candied cherries - 1 c
  • citron - 1 c

How to make plum pudding:

Break mincemeat into pieces. Add water and cook slowly, stirring constantly, until all lumps are broken up. Boil 3 minutes or until liquid is evaporated. Add coffee and cook mixture.

Cream shortening and sugar. Beat egg slightly and add to creamed mixture. Add crumbs, baking powder, cinnamon, cloves, nutmeg and raisins. Fold into mincemeat mixture. Fill pudding mold 3/4 full. Cover tightly and steam 1 1/2 hours. Unmold. Garnish with cherries and citron. Serve hot with sauce.
