Pineapple chicken stir-fry
Ingredients/Components
- pkg - 6 oz
- brown sugar - 1 tsp
- cornstarch - 4 tsp
- cooking oil - 1 Tbsp
- can chow mein noodles - 1 item
- unsweetened pineapple juice - 3/4 1
- teriyaki sauce - 3 Tbsp
- can pineapple chunks - 8 oz
- medium carrots, julienned - 2 item
- frozen chicken chunks - 12 oz
How to make pineapple chicken stir-fry:
Stir-fry chicken chunks. Drain pineapple, reserving juice. Add additional pineapple juice to make 1 1/4 cups. Combine juice, teriyaki sauce, cornstarch and brown sugar; set aside.In wok or large pan, heat oil and stir-fry carrots for 4 minutes or until crisp-tender. Stir in juice mixture, pineapple chunks and pea pods, cooking until thick and bubbly. Cook for 2 minutes more. Add chicken and heat through. Serve over chow mein noodles.
