Pickled watermelon rind
Ingredients/Components
- sugar - 2 c
- water - 1 c
- lemon, thinly sliced - 1/2 item
- whole cloves
- white vinegar - 1 c
- coarse-medium salt - 1/4 c
- watermelon rind - 2 lb
- broken stick cinnamon - 1 Tbsp
How to make pickled watermelon rind:
Trim dark green and pink parts from the watermelon rind; cut in 1-inch cubes. Soak overnight in salt water (1/4 cup salt to 1 quart water; it may take more to cover). Drain, rinse and cover with cold water. Cook until just tender; drain.Combine the sugar, white vinegar and 1 cup water. Add the cinnamon and cloves, tied in a bag (cheesecloth or similar). Simmer for 10 minutes. Remove spice bag. Add watermelon rind and lemon. Simmer until rind is clear. Seal, boiling hot, in hot, sterilized jars to 1/2 inch from top. Makes 2 pints.
