- vinegar - 6 c
- whole cloves - 2 Tbsp
- pieces stick cinnamon - 2 item
- whole watermelon - 1 item
How to make pickled watermelon rind:
Syrup:6 c. sugar6 c. vinegar2 Tbsp. whole cloves2 pieces stick cinnamon Cut watermelon rind in medium size pieces, 1 x 1 1/2 x 2-inches. Pare off green rind and pink of the melon. Cook rind pieces in salted water until fairly tender, not too soft! Drain. Cook syrup down slowly until golden color and quite thick. Pack jars; cover with syrup. Seal in airtight jars.
