Ingredients/Components

  • sugar - 1 Tbsp
  • salt - 1/2 tsp
  • clove garlic, minced - 1 item
  • bay leaf - 1 item
  • small onion, sliced - 1 item
  • white vinegar
  • mixed pickling spices - 1 tsp
  • to 8 eggs, hard-cooked - 6 item

How to make pickled eggs:

Simmer all ingredients, except eggs, uncovered for ten minutes. Peel hard-cooked eggs and put them in a one-quart glass jar, loosely, so that the pickling solution can circulate freely. Pour hot mixture over eggs, seal and refrigerate. The pickling process takes several days.

Variation: For red pickled eggs, add 1/2 cup beet juice to the pickling mixture.
