- fresh herring - 18 item
- Bermuda onion - 1 item
- sugar - 1 c
- lemon - 1 item
- salt - 1 item
- mixed pickling spices - 1 item
- white vinegar - 1 pt
How to make pickled herring:
Dress herring, removing head and tail. Wash well. Cut herring in 1-inch wide chunks and put in 1 gallon jar. Make brine of 1 cup salt to 2 quarts water.
