- sugar - 1/4 c
- eggs - 2 item
- salt - 3/4 tsp
- baking powder - 4 tsp
- soft shortening - 1/4 c
- sifted enriched flour - 1 c
- corn meal - 1 c
- milk or buttermilk - 1 c
How to make perfect cornbread:
Sift together flour, sugar, baking powder and salt; stir in corn meal. Add eggs, milk or buttermilk and shortening. Beat with rotary or electric beater until just smooth, about 1 minute (do not overbeat). Pour batter into greased 9 x 9 x 2-inch pan.
