Peppery hush puppies
Ingredients/Components
- sugar
- salt - 1 tsp
- water - 2/3 c
- melted margarine - 1/2 c
- soda - 1/2 tsp
- buttermilk - 1/2 c
- baking powder - 2 tsp
- egg, well beaten - 1 item
- grated onion - 1 c
- yellow corn meal - 2 c
- Creole seasoning - 1 tsp
- medium green pepper, finely chopped - 1 item
- plus 3 Tbsp - 1/2 c
- jalapeno peppers, seeded and finely chopped - 2 item
How to make peppery hush puppies:
Combine dry ingredients; add buttermilk, water, margarine and eggs. Mix well. Stir in onion and peppers. Carefully drop batter by teaspoon into hot oil (375°). Fry 3 to 5 minutes, turning once, until hush puppies are golden brown. Drain well on paper towels. Yields about 2 1/2 dozen.Recipe categories: Appetizers, Side dish, Vegetarian.
