Peasant potatoes
Ingredients/Components
- dried oregano - 1 tsp
- unsalted butter - 4 Tbsp
- Salt and pepper to taste - 1 item
- large sweet onion, diced - 1 item
- large cloves garlic, chopped - 2 item
- smoked beef sausage, cut into 3/4 inch slices - 1/2 lb
- medium potatoes, cut into 1-1/2 to 2 inch pieces - 6 item
- sliced Savoy or other cabbage - 2 c
- diced or sliced roasted red bell peppers - 1 c
- shaved fresh Parmesan cheese - 1/2 c
How to make peasant potatoes:
In a large skillet over medium heat, melt butter. Add onion and garlic. Cook and stir 5 minutes or until onion is transparent. Stir in oregano and sausage and cook about 5 minutes more. Stir in potatoes, salt and pepper until potatoes are well coated with butter. Place mixture in slow cooker. Cover and cook on High 3 to 4 hours or on low for 6 to 8 hours, stirring every hour if possible. During last 30 minutes of cooking, add cabbage and peppers. Sprinkle with Parmesan cheese before serving. Makes 6 side dish servings or 4 main dish servings.Recipe categories: Main dish, One Dish meal, Beef sausage.
