Peasant bread


Ingredients/Components
- salt - 1 tsp
- flour - 4 c
- cornmeal - 1 item
- ground cumin - 1 tsp
- active dry yeast - 1/2 oz
- lukewarm water
How to make peasant bread:
Place the yeast and cumin in a large bowl. Stir in 1/3 cup of the lukewarm water until the yeast is dissolved. Stir in the remaining 1 1/3 cups of water. Gradually stir in the remaining flour.Turn the dough onto a floured surface and knead for 10 minutes. Place the dough in a large, cleaned, lightly oiled bowl. Cover with a damp towel and let rise in a warm place until doubled in bulk, about 1 hour.
Punch down the dough. Knead for 5 minutes and divide in half. Sprinkle a large baking sheet lightly with cornmeal. Shape the dough into 2 round balls, flatten them slightly and place on baking sheet.
Cover with a towel and let rise until doubled, about 40 minutes. Bake at 425° until browned and until the loaves make a hollow sound when tapped on bottom. Eat with lots of butter!
