Ingredients/Components

  • eggs - 6 item
  • half and half - 2 Tbsp
  • salt - 1/2 tsp
  • pepper - 1/2 tsp
  • grated Parmesan cheese - 1/4 c
  • olive oil - 2 Tbsp
  • chopped parsley - 1 Tbsp
  • dried oregano - 1/4 tsp
  • dried basil - 1/4 tsp
  • unsalted butter - 2 Tbsp
  • mushrooms, thinly sliced - 1/2 lb
  • shallots or 2 scallions - 3 item

How to make frittata:

Preheat broiler. Heat butter and oil together in 10-inch ovenproof skillet. Saute the mushrooms and shallots over medium-low heat, until soft and lightly golden, 5 to 10 minutes.

In a bowl, beat eggs with half and half, salt and pepper until well mixed. Add 1/4 cup cheese, parsley, oregano and basil. Continue to beat until smooth. Pour egg mix into skillet and then cook.
