Ingredients/Components
- eggs - 6 item
- half and half - 2 Tbsp
- salt - 1/2 tsp
- pepper - 1/2 tsp
- grated Parmesan cheese - 1/4 c
- olive oil - 2 Tbsp
- chopped parsley - 1 Tbsp
- dried oregano - 1/4 tsp
- dried basil - 1/4 tsp
- unsalted butter - 2 Tbsp
- mushrooms, thinly sliced - 1/2 lb
- shallots or 2 scallions - 3 item
How to make frittata:
Preheat broiler. Heat butter and oil together in 10-inch ovenproof skillet. Saute the mushrooms and shallots over medium-low heat, until soft and lightly golden, 5 to 10 minutes.In a bowl, beat eggs with half and half, salt and pepper until well mixed. Add 1/4 cup cheese, parsley, oregano and basil. Continue to beat until smooth. Pour egg mix into skillet and then cook.
