Pasta primavera
Ingredients/Components
- pkg - 2 oz
- salt - 1/2 tsp
- butter - 4 Tbsp
- heavy cream - 1 c
- pepper - 1/2 tsp
- grated Parmesan cheese - 1/2 c
- sliced zucchini - 1 c
- mushrooms, sliced - 3/4 lb
- pine nuts - 1/3 c
- olive oil - 4 Tbsp
- chopped parsley - 1/4 c
- minced garlic - 3 tsp
- medium tomatoes, chopped - 2 item
- broccoli, coarsely chopped
- snow peas or 1 c
- asparagus stalks, sliced when available - 8 item
- chopped fresh basil when available - 1/3 c
How to make pasta primavera:
Pour boiling water over the four vegetables. Let stand 4 minutes. Rinse under cold water and set aside. In 2 tablespoons oil, saute tomatoes, 1 teaspoon garlic, parsley, salt and pepper for 3 minutes. Set aside and keep warm.In large skillet, saute pine nuts in remaining oil. Add remaining garlic, mushrooms and blanched vegetables and stir-fry 4 minutes. Cook linguine according to package directions and add to vegetables. Gently add remaining ingredients. Top with sauteed tomatoes and serve.
