Ingredients/Components

  • pkg - 2 oz
  • salt - 1/2 tsp
  • butter - 4 Tbsp
  • heavy cream - 1 c
  • pepper - 1/2 tsp
  • grated Parmesan cheese - 1/2 c
  • sliced zucchini - 1 c
  • mushrooms, sliced - 3/4 lb
  • pine nuts - 1/3 c
  • olive oil - 4 Tbsp
  • chopped parsley - 1/4 c
  • minced garlic - 3 tsp
  • medium tomatoes, chopped - 2 item
  • broccoli, coarsely chopped
  • snow peas or 1 c
  • asparagus stalks, sliced when available - 8 item
  • chopped fresh basil when available - 1/3 c

How to make pasta primavera:

Pour boiling water over the four vegetables. Let stand 4 minutes. Rinse under cold water and set aside. In 2 tablespoons oil, saute tomatoes, 1 teaspoon garlic, parsley, salt and pepper for 3 minutes. Set aside and keep warm.

In large skillet, saute pine nuts in remaining oil. Add remaining garlic, mushrooms and blanched vegetables and stir-fry 4 minutes. Cook linguine according to package directions and add to vegetables. Gently add remaining ingredients. Top with sauteed tomatoes and serve.
