Ingredients/Components
- milk - 4 c
- salt - 2 tsp
- flour - 8 Tbsp
- lemon juice - 1 Tbsp
- butter or oleo - 3 Tbsp
- dry mustard - 1 Tbsp
- large onions, chopped - 3 item
- chicken - 1 item
- thin spaghetti
- American cheese, grated - 1/2 lb
- ribs celery, chopped - 3 item
- cooking sherry - 1/4 c
- jar chopped pimento, drained - 1 item
- medium bell peppers, chopped - 2 item
- or 2 cans chopped mushrooms - 1 item
How to make party chicken tetrazzini:
Cheese Sauce:8 Tbsp. butter or oleo8 Tbsp. flour4 c. milk2 tsp. salt1/2 lb. American cheese, grated1 Tbsp. lemon juice1 Tbsp. dry mustard1/4 c. cooking sherry Boil chicken with bell peppers, 1 onion and celery. Saute remaining onions and bell pepper in 3 tablespoons oleo. Cut chicken into bite size pieces. Make cheese sauce by combining butter and flour until it bubbles. Remove from fire and gradually stir in milk. Return to fire, stirring constantly, until sauce thickens. Add grated cheese; stir until it melts. Add sauteed vegetables, chicken, mushrooms, pimento, lemon juice, mustard and season with salt and red pepper (to taste). Remove from fire. Boil spaghetti in chicken broth. Add to chicken cheese mixture. Bake at 350° until heated thoroughly, 30 to 45 minutes.Recipe categories: Chicken, Main dish, Poultry.
