  • potatoes, peeled and cut into 2-inch pieces - 2 lb
  • margarine - 1/2 c
  • parsley dried works fine - 1/4 c
  • salt and pepper to taste - 1 item

How to make parsley potatoes:

In a saucepan, cook potatoes in water to cover until tender. Drain. Combine butter or margarine and parsley. Pour over the potatoes and toss to coat. Season with salt and pepper. Yields 6 to 8 servings.
