Paella
Ingredients/Components
- oregano - 1/2 tsp
- olive oil - 1/4 c
- cloves garlic, crushed - 2 item
- black pepper - 1/4 tsp
- long-grain rice - 1 c
- bell pepper, sliced - 1/2 item
- pimento, diced - 1/4 c
- good chicken stock - 3 4
- cooked chicken, cut into large cubes - 4 c
- frozen LeSueur peas, broken apart - 1 c
- shelled deveined raw shrimp - 20 item
- chorizo, sliced - 1/2 item
- or 4 medium tomatoes, peeled and wedged - 3 item
How to make paella:
Brown rice and garlic in oil over medium heat, stirring constantly, about 10 minutes. Add 3 cups chicken stock, pimento, oregano, green pepper, black pepper and chorizo. Cook over low heat 15 minutes. Add chicken, shrimp, peas and tomatoes. Bring mixture to boil, cover and cook over very low heat for 15 minutes. Add more stock if necessary.
