Ingredients/Components

  • chicken broth
  • olive oil - 1/8 c
  • tomato sauce - 1 c
  • medium chopped onion - 1 item
  • peas - 1/2 c
  • hard-boiled eggs - 2 item
  • shrimp - 1 lb
  • chicken thighs - 8 item
  • crabs - 2 item
  • red pepper, cut in strips - 1 item
  • rice, washed
  • head garlic, crushed - 1 item
  • slices of lemon - 1 item
  • sprig parsley - 1 item
  • to 25 clams - 20 item
  • sausage or chorizo - 1 item
  • string beans, halved - 10 item

How to make paella:

Boil clams. Set aside 1 cup broth. Boil crab and set aside. Devein shrimp; saute with garlic. Set aside. Heat olive oil in heavy pan. Fry chicken and sausage. Cover until half done and push to one side. Saute onion in garlic, then add tomato sauce. Add broth, clams, chicken and rice. Mix everything together. When rice is half done, add red pepper and green beans. Cover without stirring for 20 minutes or until broth is absorbed by the rice. Paella may be baked in oven and kept covered. During last 5 minutes of cooking, add shrimp, crab and peas on top. Garnish with sliced hard-boiled eggs, parsley and lemon slices.
