  • sour cream - 1 2
  • salt - 1 Tbsp
  • brown sugar - 1 Tbsp
  • water - 6 qt
  • lemon juice - 1 Tbsp
  • cloves garlic, minced - 8 item
  • oregano - 1 Tbsp
  • parsley - 6 Tbsp
  • olive oil - 1 c
  • plus 1 tsp - 2 Tbsp
  • black pepper - 2 tsp
  • bay leaves - 3 item
  • cayenne pepper - 1 item
  • sherry - 1/4 c
  • onions - 3 c
  • sweet red pepper, diced - 1 item
  • meaty ham bone - 1 item
  • black beans, soaked - 2 lb

How to make black bean soup:

Heat oil. Add onions and garlic. Cook about 10 minutes. Drain beans. Add them, ham hocks and 6 quarts of water. Stir in 2 tablespoons cumin, oregano, bay leaves, salt, pepper, cayenne and 2 tablespoons parsley. Bring to a boil. Reduce heat. Cook, uncovered, until liquid is reduced by 3/4. This will be 1 1/2 to 2 hours. Cool ham. Add meat to pot. Stir in remaining parsley, sweet red pepper, remaining cumin, sherry, brown sugar and lemon juice. Simmer another 30 minutes. Serve with dollop of sour cream. Serves 10 to 12 small portions.
