New potatoes with lemon butter
Ingredients/Components
- butter or margarine - 1/2 c
- salt - 1/2 tsp
- lemon juice - 6 Tbsp
- grated lemon rind - 1 Tbsp
- ground nutmeg - 1/4 tsp
- minced fresh chives - 3 Tbsp
- pepper - 1/2 tsp
- minced fresh parsley - 2 Tbsp
- olive oil - 1/4 c
- small new potatoes - 3 lb
How to make new potatoes with lemon butter:
Peel each potato, leaving a 1 1/2-inch band around middle. Cook potatoes in Dutch oven in boiling water to cover 20 minutes or until tender; drain. Place in large bowl. Bring butter and next 8 ingredients to a boil in a saucepan over medium-high heat. Remove from heat. Drizzle over potatoes, tossing to coat.
