New orleans red beans and rice
Ingredients/Components
- red kidney beans, soaked - 1 lb
- meaty ham bone - 1 item
- sliced smoked sausage - 1/2 lb
- sliced pickled or salt pork - 1/2 lb
- chopped onion - 1 c
- chopped celery - 1/2 c
- minced clove garlic - 1 item
- bay leaves - 2 item
- basil - 1/2 tsp
- thyme - 1/4 tsp
- ground black pepper - 1/2 tsp
- pinch cayenne - 1 item
- pinch Creole seasoning - 1 item
- raw rice - 1 c
How to make new orleans red beans and rice:
Soak beans in cold water overnight. Drain beans. Put all ingredients except for rice in large stock pot. Add cold water to cover ingredients. Bring to boil, cover and lower flame. Simmer over low heat for about 1 1/2 hours. Prevent sticking by stirring and scraping sides every 1/2 hour. If too thick, may add water.
