Ingredients/Components
- salt - 1 tsp
- water - 6 c
- paprika - 2 tsp
- pepper
- chopped onion - 1 c
- chopped celery - 1 c
- oregano
- cloves garlic - 5 item
- chopped green onions - 1 c
- olive oil - 1 Tbsp
- bay leaves - 2 item
- thyme - 2 tsp
- can diced tomatoes - 1 oz
- Tabasco to taste - 1 item
- small red beans like kidney beans - 1 lb
- red/green bell pepper - 1 c
- cooked white rice - 5 c
- diced ham, turkey or chicken - 1 c
How to make red beans and rice:
Rinse beans; cover in water and let soak overnight. In a pot, heat olive oil. Add onion, green onion, bell pepper and garlic. Saut?© over medium heat until vegetables are soft. Add the bay leaf, pepper, thyme, oregano and paprika. Drain the beans (discard water). Add the beans to the pot, along with 6 cups fresh water. Bring to a simmer; cover and cook until the beans are tender, about 2 1/2 hours.When beans are tender, mash some of them against the side of pot or blend 1 cup beans in blender. This will make dish thicker and creamier. Stir in the tomatoes, meat and rice. Let mixture heat up and then serve. Add Tabasco to taste! Makes 12 servings.
