Ingredients/Components

  • water - 3 qt
  • salt and pepper to taste - 1 item
  • tomato paste - 2 Tbsp
  • cloves garlic, chopped - 2 item
  • fresh parsley, chopped - 1/4 c
  • mashed potatoes - 1/2 c
  • onions - 3 item
  • meaty ham bone - 1 item
  • navy beans, soaked overnight - 2 c
  • bunch celery, chopped including leaves - 1 item
  • sour cream for serving - 1 item

How to make navy bean soup:

Place soaked beans, water and ham bone in a large kettle. Simmer, covered, for 2 hours. Stir in potatoes when half cooked. Add remaining ingredients except for sour cream. Simmer for 1 hour. Remove ham bone; chop meat and return to kettle. Season to taste. Serve as is or puree in food processor. Serves 6.
