Navy bean soup
Ingredients/Components
- water - 3 qt
- salt and pepper to taste - 1 item
- tomato paste - 2 Tbsp
- cloves garlic, chopped - 2 item
- fresh parsley, chopped - 1/4 c
- mashed potatoes - 1/2 c
- onions - 3 item
- meaty ham bone - 1 item
- navy beans, soaked overnight - 2 c
- bunch celery, chopped including leaves - 1 item
- sour cream for serving - 1 item
How to make navy bean soup:
Place soaked beans, water and ham bone in a large kettle. Simmer, covered, for 2 hours. Stir in potatoes when half cooked. Add remaining ingredients except for sour cream. Simmer for 1 hour. Remove ham bone; chop meat and return to kettle. Season to taste. Serve as is or puree in food processor. Serves 6.Recipe categories: Lunch/snacks, Main dish, One Dish meal.
