Oatmeal cake
Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour
- stick margarine - 1 item
- brown sugar - 1 c
- evaporated milk
- soda - 1 tsp
- flaked coconut - 1 c
- boiling water
- eggs, well beaten - 2 item
- white sugar - 1 c
- oats - 1 c
- Mix sugars; add eggs
How to make oatmeal cake:
Pour water over oatmeal and margarine; let stand 20 minutes. Mix sugars; add eggs. Sift salt, flour, cinnamon and soda. Add to sugar and eggs. Mix well. Add oats to mixture; mix well. Spread batter in a greased 11 x 8 x 2 1/2-inch pan. Bake at 350° for 25 to 30 minutes.Topping:6 Tbsp. margarine1 c. flaked coconut1 tsp. vanilla1 1/2 c. evaporated milk1 c. brown sugar1 c. chopped nuts Combine all ingredients in top of double boiler and beat until margarine melts.
