Ingredients/Components

  • milk - 1/4 c
  • oleo, melted - 3 Tbsp
  • paprika - 1/4 tsp
  • chopped onion - 1/4 c
  • shredded Cheddar cheese - 1/2 c
  • fresh mushrooms, sliced - 1 lb
  • medium red potatoes - 6 item
  • can cream of chicken soup, undiluted - 1 3/4

How to make mushroom potato casserole:

Cook whole potatoes in boiling salted water 25 to 30 minutes or until tender. Drain and slightly cool. Peel and slice about 1/2 inch thick. Set aside.

Saute mushrooms in oleo until tender. Set aside. Combine soup, milk and onion in small saucepan. Cook until thoroughly heated. Remove from heat. Set aside. Place sliced potatoes in lightly greased 1 1/2-quart casserole; top with mushrooms, reserving 1/2 cup. Spoon soup mixture over mushrooms. Top with cheese and paprika. Bake at 350° for 15 minutes. Garnish with reserved mushrooms.
