Mushroom caviar
Ingredients/Components
- medium onions, minced - 3 item
- olive oil - 5 Tbsp
- mushrooms, finely chopped in processor
- coriander - 3 to
- salt and freshly ground pepper to taste - 1 item
- fresh chopped parsley for garnish - 1 item
- thinly sliced black bread or crackers - 1 item
How to make mushroom caviar:
Cook onions until soft. Add mushrooms, coriander, salt and pepper. Cook until mushrooms let off their juice. Turn up heat and cook until most of liquid evaporates. Refrigerate until chilled. Add seasoning, if necessary. Garnish with chopped parsley and serve with thinly sliced black bread. Freezes well.Recipe categories: Appetizers, Mushroom, Spreads.
