Ingredients/Components

  • butter
  • nutmeg - 1/2 tsp
  • heavy cream - 2 c
  • eggs, lightly beaten - 4 item
  • pepper - 1/2 tsp
  • onion, minced - 1 item
  • sliced black olives - 1 item
  • slices bacon, diced - 2 item
  • diced red pepper - 1 item
  • mushroom, sliced thin - 1 c
  • swiss cheese, cubed - 1 c
  • 10 inch pastry shell, baked - 1 item

How to make mushroom & swiss cheese quiche:

Saut? mushrooms in butter for 3 minutes. In another pan, saut? bacon until crisp and drain on absorbent paper. Combine mushrooms and bacon; add cheese and onion. Turn mixture into pie shell. Stir cream, nutmeg and pepper into eggs. Pour mixture into pie shell. Bake at 400 degrees for 10 minutes; reduce heat to 300 and bake 30 minutes longer. Garnish with red pepper and black olives. Makes 8 large servings.

This dish can be made ahead and frozen.
