Ingredients/Components

  • can chicken broth - 1 item
  • salt and pepper to taste - 1 item
  • stalks celery - 2 item
  • green pepper, chopped - 1/2 item
  • onion - 1 item
  • barley - 1/2 c
  • cans water - 2 item
  • diced mushrooms - 1 item
  • canola oil - 1 item
  • herbs whatever you like - 1 item

How to make mushroom and barley soup:

I devised this recipe because we grow shiitake mushrooms.

Fry an onion, celery and green pepper in a little canola oil for 5 to 10 minutes until clear. Add mushrooms and saute 3 to 5 minutes. Then add broth, water, salt, pepper and whatever herbs you like (perhaps thyme, oregano, a little sage, a little dill, a little rosemary, whatever you like). Add barley and simmer until barley is cooked, about 30 minutes or so. Garnish with fresh herbs.

Note: Fresh herbs should be added in the last 10 minutes of cooking. Dried can be added early.
