Mixed vegetable pickles
Ingredients/Components
- flour - 1/2 c
- white sugar - 4 c
- carrots - 1 qt
- celery seed - 2 tsp
- peas - 1 qt
- corn - 1 qt
- turmeric - 1 tsp
- cauliflower - 1 qt
- onions - 1 qt
- cukes - 2 qt
- green or yellow beans, or mixed - 1 qt
- Soak diced cukes, onion and cauliflower in salt water for 2 hours or more; drain well
How to make mixed vegetable pickles:
Cook peas, beans, carrots and corn with salt as for table use, and drain. Soak diced cukes, onion and cauliflower in salt water for 2 hours or more; drain well.Dressing:1 qt. vinegar4 c. white sugar1 tsp. turmeric1/2 c. flour2 tsp. celery seed Mix with a bit of vinegar. Add the rest of vinegar and let boil. Put vegetables in and boil for a few minutes. Put into sterilized jars and seal.Recipe categories: Lunch/snacks, Condiments, etc., Side dish.
