Ingredients/Components
- vanilla wafers - 12 item
- sugar - 1/2 c
- vanilla - 1 tsp
- dash of salt - 1 item
- pkg - 2 oz
- eggs, at room temperature - 2 item
- couple drops lemon juice - 1 item
How to make mini cheesecakes:
Line mini muffin tin with foil liners. Place 1 vanilla wafer in each liner. Mix cream cheese, vanilla, lemon juice, salt and sugar on medium speed until well blended. Add eggs; mix well. Pour over wafers, filling 3/4 full. Bake at 325° for 25Recipe categories: Cheesecake, Desserts, < 30 mins.
