Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- large eggs - 2 item
- can cherry pie filling - 1 item
- each pkg - 2 oz
- vanilla wafer cookies - 18 item
How to make mini cheesecakes:
Beat cream cheese with electric beater until well creamed. Add sugar, eggs and vanilla and beat until fluffy, about 3 to 5 minutes.Put one vanilla wafer (flat side down) in bottom of regular-sized (labeled "large") foil baking cups. Pour batter into cups, filling 3/4 full. Place on baking sheet.
Bake at 350° for 15 minutes, until tops are slightly golden or until set. Cool on wire rack. Top with cherry pie filling. Refrigerate. Makes 18.
