Strawberry cheesecake
Ingredients/Components
- eggs - 4 item
- pkg - 3 oz
- salt - 1/4 tsp
- vanilla, divided - 3 tsp
- sour cream or creme fraiche - 1 c
- no-sugar added strawberry pourable fruit* - 1 c
- fresh strawberries, halved or sliced - 1 item
How to make strawberry cheesecake:
*Substitute for pourable fruit: 3/4 cup no-sugar added strawberry fruit spread and 1/4 cup warm water.Preheat oven to 325°. Beat cream cheese in large bowl until creamy. Blend in pourable fruit, 1 teaspoon vanilla and salt. Add eggs, one at a time, beating well after each addition. Pour into greased 9-inch spring-form pan and bake 50 minutes.
Combine sour cream and 2 teaspoons vanilla; mix well. Carefully spoon over warm cheesecake. Return to oven. Continue baking 10 minutes or just until set. Turn off oven; leave cake in oven for 30 minutes with door closed. Transfer to wire rack. Loosen from pan, but let cool completely before removing from pan. Cover and chill 6 hours or overnight. Garnish.
