Minestrone soup
Ingredients/Components
- oil - 1/3 c
- beef stew meat - 1 lb
- flour - 1 item
- chopped onion - 3/4 c
- chopped celery - 1 c
- water
- diced tomato - 1/2 c
- shredded cabbage - 1/2 c
- minced parsley - 1/4 c
- sliced carrots - 1/2 c
- minced garlic - 1/4 tsp
- cracked wheat - 1/2 c
- salt
- pepper - 1/4 tsp
- oregano - 1/4 tsp
- frozen peas - 1 pkg
- can kidney beans - 1/2 item
- sliced zucchini - 1 c
- grated Parmesan cheese - 1 item
How to make minestrone soup:
Roll beef stew meat in flour and brown in oil. Add onion and saute. Add celery and water. Cover; simmer slowly until meat is tender (about 3 hours). Add tomato, cabbage, parsley, carrots and garlic. Cover and cook 15 minutes. Add wheat, salt, pepper, oregano, peas, beans and zucchini. Cover and cook 15 to 20 minutes.
