Mexican manicotti
Ingredients/Components
- pkg - 1 1/4
- sour cream - 1/2 c
- water - 2 c
- 8 oz - 2 c
- chopped onion - 2 Tbsp
- green onions, sliced - 3 item
- can tomato sauce - 1 oz
- ground beef - 1/2 lb
- can refried beans - 1/2 oz
- oregano leaves - 1 tsp
- sliced ripe olives - 1/4 c
- manicotti shells - 10 item
How to make mexican manicotti:
Mix together the ground beef, beans, onion, oregano, 1 1/2 tablespoons of seasoning mix and 1 cup of cheese. With a small spoon or using fingers, press meat mixture into shells. Arrange in a 12 x 8-inch microwave-safe baking dish.Microwave on High, uncovered, the tomato sauce, 1 cup of water and remaining taco seasoning mix in 4-cup glass measure for 6 to 7 minutes or until steaming hot. Pour over shells. Microwave on High for 14 minutes; turn each shell over. Add remaining 1 cup water. Cover, then microwave on Medium (50%) for 16 minutes longer or until shells are tender. Let stand, covered, 5 minutes. Spoon sour cream onto shells. Sprinkle with remaining 1 cup cheese, green onions and olives. Microwave on High, uncovered, 1 to 1 1/2 minutes or until cheese is melted. Makes 5 servings.
