Ingredients/Components

  • salt
  • pepper - 1/4 tsp
  • chili powder - 2 tsp
  • shredded lettuce - 2 c
  • large onions, chopped - 2 item
  • can kidney beans - 1 item
  • bacon drippings or 1/2 stick butter - 1/4 c
  • finely diced cooked beef - 1 c

How to make mexican hash:

Saute chopped onions in a large skillet for 5 minutes, stirring occasionally. Add beef, chili powder, salt and pepper; cook 1 minute. Add kidney beans and mix well. Cook slowly for 15 minutes, turning occasionally to blend in any crisp crust.

To serve, spoon into deep platter. Top with shredded lettuce piled in a mound in center of platter. Makes 4 servings.
