Mexican cornbread casserole
Ingredients/Components
- milk - 2/3 c
- eggs, beaten - 2 item
- ground beef - 1 lb
- slices American cheese - 4 item
- onion
- box Jiffy cornbread mix - 1 1/2
- cream-style corn - 2 c
- chopped jalapeno peppers or can use bell pepper - 2 Tbsp
How to make mexican cornbread casserole:
Preheat oven to 425°. Brown meat with onion and peppers. Set aside. Combine eggs, 1 cup corn and milk with cornbread mix. Stir until dry ingredients are moistened. Pour 1/2 of the batter into greased 9-inch square pan. Top with beef mixture, cheese slices and remaining 1 cup corn. Pour remaining half of batter on top and bake 25 to 30 minutes.Recipe categories: Breads, Grains, Side dish.
