  • eggs - 2 item
  • flour - 1/2 c
  • salt and pepper - 1 item
  • can cream-style corn - 1 oz
  • Cheddar cheese - 2 c
  • meal
  • to 3 jalapeno peppers, chopped - 2 item

How to make mexican cornbread:

Preheat oil in an iron skillet until hot. Mix remaining ingredients except the cheese. Pour half the batter in iron skillet. Sprinkle 1 cup of cheese on top of batter. Pour remainder of batter on top of cheese. Sprinkle remainder of cheese in middle of batter. If sprinkled on edges cheese will burn. Bake at 350° for 30 to 35 minutes.
