Mexican cornbread
Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- buttermilk - 1 c
- baking soda - 3/4 tsp
- cornmeal - 1 c
- grated cheese - 1/2 lb
- medium onion - 1 item
- can cream-style corn - 1/2 item
- bacon drippings - 1/2 c
- red bell pepper, chopped fine - 1/2 item
How to make mexican cornbread:
Mix all ingredients except the grated cheese. Pour half the batter into a large iron skillet which has been greased. Sprinkle grated cheese over skillet mixture and add remaining batter. Bake at 400° until golden brown.Recipe categories: Breads, Quick breads, North american.
