Ingredients/Components

  • eggs - 2 item
  • salt - 1/2 tsp
  • buttermilk - 1 c
  • baking soda - 3/4 tsp
  • cornmeal - 1 c
  • grated cheese - 1/2 lb
  • medium onion - 1 item
  • can cream-style corn - 1/2 item
  • bacon drippings - 1/2 c
  • red bell pepper, chopped fine - 1/2 item

How to make mexican cornbread:

Mix all ingredients except the grated cheese. Pour half the batter into a large iron skillet which has been greased. Sprinkle grated cheese over skillet mixture and add remaining batter. Bake at 400° until golden brown.
