Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- flour - 1/4 c
- oil - 1/4 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- cooking oil - 1/2 c
- cornmeal
- can whole kernel corn, drained - 1 item
- grated cheese
- can cream-style corn - 1 item
- large onion - 1 item
- cooked black-eyed peas
- or 3 jalapeno peppers - 2 item
- ground round hamburger - 1 lb
- sufficient buttermilk to mix - 1 item
How to make hopping john:
Bread Mixture:2 c. cornmeal1/4 c. flour1 tsp. salt2 tsp. baking powder1 tsp. baking soda2 eggs1/4 c. oil sufficient buttermilk to mix Combine first 5 ingredients. Cook until done; set aside. Combine the bread mixture. Add the meat mixture, peas, corn and cheese; stir well. Pour all this into a well-greased, hot iron skillet. Bake at 450° for 30 to 35 minutes.
