  • eggs - 2 item
  • carton sour cream - 1 oz
  • cooking oil - 2/3 c
  • chopped onions - 1/2 c
  • bell pepper - 1/4 c
  • cream-style corn - 1 c
  • self-rising corn meal
  • grated cheese, divided - 1 c
  • hot peppers sauce with juice, chopped - 1/2 c

How to make mexican cornbread:

In a mixing bowl, combine all ingredients except 1/4 cup of cheese. Mix well. Place in a hot greased skillet; sprinkle remaining cheese over the top. Bake at 350° for 30 minutes, or until golden brown.
