Mexican cornbread
Ingredients/Components
- corn meal - 1 c
- bacon drippings - 1/3 c
- sweet milk - 1 c
- eggs, well beaten - 2 item
- salt - 3/4 tsp
- soda - 1/2 tsp
- small jar pimento - 1 item
- 3 creamed corn - 1 can
- ground round - 1/2 lb
- large onion, chopped fine - 1 item
- sharp Cheddar cheese, grated - 1/2 lb
- bell pepper, chopped - 1/2 item
- to 6 jalapeno peppers, chopped - 3 item
How to make mexican cornbread:
Mix first 8 ingredients and set aside. Cook ground round, place on pepper towel to drain. Combine all ingredients and put into baking pan in which you have already sprinkled a thin layer of cornmeal and slightly browned.
