Ingredients/Components

  • corn meal - 1 c
  • bacon drippings - 1/3 c
  • sweet milk - 1 c
  • eggs, well beaten - 2 item
  • salt - 3/4 tsp
  • soda - 1/2 tsp
  • small jar pimento - 1 item
  • 3 creamed corn - 1 can
  • ground round - 1/2 lb
  • large onion, chopped fine - 1 item
  • sharp Cheddar cheese, grated - 1/2 lb
  • bell pepper, chopped - 1/2 item
  • to 6 jalapeno peppers, chopped - 3 item

How to make mexican cornbread:

Mix first 8 ingredients and set aside. Cook ground round, place on pepper towel to drain. Combine all ingredients and put into baking pan in which you have already sprinkled a thin layer of cornmeal and slightly browned. Bake at 350° for 45 to 50 minutes until done.
