Ingredients/Components
- eggs - 2 item
- milk - 1 c
- salt - 1/2 tsp
- soda - 1/2 tsp
- large onion, chopped - 1 item
- can cream-style corn - 1 oz
- Cheddar cheese, grated - 1/2 lb
- yellow corn meal - 1 c
- bacon drippings - 1/2 c
- ground beef optional - 1 lb
- jalapeno peppers, chopped - 4 item
How to make mexican corn bread:
Mix corn meal, salt and soda. Add milk and stir. Then add eggs, one at a time, beating well after each. Pour in bacon drippings and beat. Add remaining ingredients. Stir and bake in an iron skillet for 45 minutes at 350°.Recipe categories: < 4 hours, Breads, Mexican.
