Mexican corn bread
Ingredients/Components
- sour cream - 1 c
- salt - 1 tsp
- oil - 2/3 c
- eggs, beaten - 2 item
- baking powder - 1 tsp
- chopped onion - 1 c
- sharp Cheddar cheese, grated - 1 c
- chopped pepper - 2 Tbsp
- corn meal
- jalapeno peppers - 2 item
- cream-style corn - 1 c
- pinch of soda - 1 item
- small can pimento pepper - 1 item
How to make mexican corn bread:
Mix all ingredients, except the cheese, together and pour 1/2 of the batter in 9-inch iron skillet and cover with 1/2 of the cheese. Pour remaining batter on the cheese and top this with remaining cheese. Bake at 350° until done. Serves 6.Recipe categories: < 4 hours, Breads, Mexican.
