Ingredients/Components

  • sour cream - 1 c
  • salt - 1 tsp
  • oil - 2/3 c
  • eggs, beaten - 2 item
  • baking powder - 1 tsp
  • chopped onion - 1 c
  • sharp Cheddar cheese, grated - 1 c
  • chopped pepper - 2 Tbsp
  • corn meal
  • jalapeno peppers - 2 item
  • cream-style corn - 1 c
  • pinch of soda - 1 item
  • small can pimento pepper - 1 item

How to make mexican corn bread:

Mix all ingredients, except the cheese, together and pour 1/2 of the batter in 9-inch iron skillet and cover with 1/2 of the cheese. Pour remaining batter on the cheese and top this with remaining cheese. Bake at 350° until done. Serves 6.
