Ingredients/Components

  • salt - 1 tsp
  • butter or margarine, melted - 1/4 c
  • chopped green pepper - 1/4 c
  • ground oregano - 1/4 tsp
  • chopped red pepper - 1/2 c
  • cubed fresh tomatoes - 1 c
  • fresh corn, cut from cob or 1 16 oz - 2 c
  • commercial French fried onions - 1 c

How to make mexican corn:

Combine the first 5 ingredients in a heavy skillet. Cover and cook over medium heat for 7 minutes, stirring occasionally. Stir in French fried onions, tomatoes and oregano. Cook, uncovered, for 2 minutes or until tomatoes are thoroughly heated. Serves 4 to 6 people.
