Ingredients/Components
- salt - 1 tsp
- butter or margarine, melted - 1/4 c
- chopped green pepper - 1/4 c
- ground oregano - 1/4 tsp
- chopped red pepper - 1/2 c
- cubed fresh tomatoes - 1 c
- fresh corn, cut from cob or 1 16 oz - 2 c
- commercial French fried onions - 1 c
How to make mexican corn:
Combine the first 5 ingredients in a heavy skillet. Cover and cook over medium heat for 7 minutes, stirring occasionally. Stir in French fried onions, tomatoes and oregano. Cook, uncovered, for 2 minutes or until tomatoes are thoroughly heated. Serves 4 to 6 people.Recipe categories: Side dish, Vegetables, Corn.
