Ingredients/Components

  • pkg - 1 oz
  • chopped onion - 1 item
  • ground beef - 1 lb
  • Mozzarella cheese - 1 pkg
  • Cheddar cheese - 1 pkg
  • box manicotti noodles - 1 item
  • can quartered tomatoes - 1 item
  • can drained, sliced mushrooms or fresh mushrooms - 1 item

How to make meaty manicotti:

Preheat oven to 350°. Prepare noodles as directed. Drain noodles and set out, not touching each other.

In skillet, brown ground beef and season to taste (salt, pepper and garlic). Drain fat from beef and return to skillet. Add tomatoes, spinach, onion and mushrooms. Simmer about 15 minutes. Remove from heat and add cottage cheese and about 1/2 of the Mozzarella cheese.

Stuff noodles with mixture and place in Pyrex dish. Pour remaining sauce on top of noodles and bake at 350° for about 20 minutes. Top with Mozzarella and Cheddar cheese. Return to oven to melt cheese.
