Marinated mushroom salad
Ingredients/Components
- salt - 2 tsp
- water - 1/4 c
- vegetable oil - 3/4 c
- vinegar - 1/2 c
- garlic powder - 2 tsp
- pepper - 1/4 tsp
- basil - 2 tsp
- green pepper, diced - 1 c
- fresh mushrooms, sliced - 1 lb
- carrots, thinly sliced
- onions, sliced in rings - 1/2 c
- can pimentos, drained and diced - 1 oz
How to make marinated mushroom salad:
In large saucepan, combine oil, vinegar, water, salt, garlic powder and pepper and bring to a boiling point. Reduce heat. Cover and simmer 5 minutes. Add mushrooms, carrots, green pepper and onion. Cover and simmer 3 minutes. Add pimentos and basil. Chill 1 day before serving. Makes 5 cups.Recipe categories: Salads, Vegetables, Mushroom.
