Ingredients/Components

  • salt - 2 tsp
  • water - 1/4 c
  • vegetable oil - 3/4 c
  • vinegar - 1/2 c
  • garlic powder - 2 tsp
  • pepper - 1/4 tsp
  • basil - 2 tsp
  • green pepper, diced - 1 c
  • fresh mushrooms, sliced - 1 lb
  • carrots, thinly sliced
  • onions, sliced in rings - 1/2 c
  • can pimentos, drained and diced - 1 oz

How to make marinated mushroom salad:

In large saucepan, combine oil, vinegar, water, salt, garlic powder and pepper and bring to a boiling point. Reduce heat. Cover and simmer 5 minutes. Add mushrooms, carrots, green pepper and onion. Cover and simmer 3 minutes. Add pimentos and basil. Chill 1 day before serving. Makes 5 cups.
