Marinated mushroom salad
Ingredients/Components
- salt - 1/2 tsp
- water
- lemon juice - 3 Tbsp
- minced fresh parsley - 1 Tbsp
- small onion, chopped - 1 item
- garlic clove, minced - 1 item
- dried oregano - 1/2 tsp
- carrots, sliced - 2 item
- sliced stuffed olives - 1/2 c
- medium green pepper, chopped - 1/2 item
- celery ribs, sliced - 2 item
- small fresh mushrooms - 3 lb
- red or white wine vinegar - 1/2 c
- prepared Italian salad dressing
- can sliced olives, drained - 1 1/4
How to make marinated mushroom salad:
Dressing:1/2 c. prepared Italian salad dressing1/2 c. red or white wine vinegar1/2 tsp. salt1 garlic clove, minced1/2 tsp. dried oregano In a large saucepan, bring water and lemon juice to a boil. Add mushrooms; cook for 3 minutes, stirring occasionally. Drain; cool. Place mushrooms in a large bowl with carrots, celery, green pepper, onion, parsley and olives.Dressing: Combine all ingredients in a small bowl or a jar with tight fitting lid. Shake or mix well. Pour over salad. Cover; refrigerate overnight. Yields 6 to 8 servings.
