  • flour - 2 c
  • water - 2 c

How to make manicotti:

Beat the eggs in mixer; add 2 cups of cold water and beat. Add flour gradually. Cook in 7 inch Teflon pan that has been sprayed with Pam. Put about 2 to 3 tablespoons in pan at a time. Cook on medium heat on top of stove until it looks dry. Turn over for about 30 seconds and remove. Cool. Store in stack with flour in between. Makes about 24.

Fill with Ricotta cheese. You will need about 1 1/2 pounds, 1 cup grated cheese, 4 to 5 eggs, chopped fresh parsley to taste and salt and pepper. Put enough of mixture to fill each manicotti, top with Mozzarella cheese and fold end over end. Place in baking dish that has been covered with macaroni sauce. Do not put on top of one another unless you only have a couple that will be that way. Cover; bake at 350° in preheated oven until hot and bubbles, about 20 to 30 minutes.
