Spinach pasta
Ingredients/Components
- salt - 1/2 tsp
- all-purpose flour
- large eggs - 3 item
- olive oil - 2 Tbsp
- pinch of nutmeg - 1 item
- spinach puree 1/2 pkg - 1/2 c
- water as necessary - 1 2
How to make spinach pasta:
Cook spinach and drain very thoroughly. Puree in blender or food processor. Measure out 1/2 cup puree and return to saucepan. Cook for a minute or two over low heat to dry out as much as possible. Combine with flour, eggs, olive oil, salt and nutmeg. Knead dough; wrap in plastic and allow to rest at least 20 minutes before rolling and cutting.Recipe categories: Pasta, Main dish, Pasta, rice and grains.
