Ingredients/Components

  • salt - 1/2 tsp
  • all-purpose flour
  • large eggs - 3 item
  • olive oil - 2 Tbsp
  • pinch of nutmeg - 1 item
  • spinach puree 1/2 pkg - 1/2 c
  • water as necessary - 1 2

How to make spinach pasta:

Cook spinach and drain very thoroughly. Puree in blender or food processor. Measure out 1/2 cup puree and return to saucepan. Cook for a minute or two over low heat to dry out as much as possible. Combine with flour, eggs, olive oil, salt and nutmeg. Knead dough; wrap in plastic and allow to rest at least 20 minutes before rolling and cutting.
