Lemon pecan cake
Ingredients/Components
- eggs - 6 item
- butter or margarine - 1 lb
- salt - 1/4 tsp
- baking powder - 1 tsp
- lemon extract - 3 Tbsp
- white raisins - 1 lb
- pecans, chopped - 4 c
- sugar 2 1/4 c - 1 lb
- flour plain, sift before measuring - 4 c
- candied cherries and pineapple mix - 1 lb
How to make lemon pecan cake:
Cream butter and sugar; add extract, egg yolks, lightly beaten, then add flour to which baking powder and salt have been added. Add fruit and nuts (floured). Mix thoroughly together. Fold in egg whites beaten stiff, but moist. Bake in 300° oven for 1 hour, then reduce heat to 250° for second hour and 15 minutes. Grease and flour pan.Recipe categories: Breads, Fruit, Nuts.
