Ingredients/Components

  • sugar
  • eggs - 3 item
  • salt - 1/4 tsp
  • flour
  • butter - 3/4 c
  • soda - 1/4 tsp
  • buttermilk - 3/4 c
  • grated lemon rind - 1 tsp
  • pecans, chopped - 3/4 c
  • concentrated lemon juice - 3 Tbsp
  • Add eggs one at a time, beating well after each addition

How to make lemon pecan bread:

Cream softened butter; gradually add sugar, beating well. Add eggs one at a time, beating well after each addition. Combine flour, soda and salt. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in the pecans and lemon rind. Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 1 hour and 15 to 20 minutes or until tested done. Cool in pan 10 minutes. Remove loaf from pan and cool. (Test after 1 hour baking, at times may be done.)Lemon Glaze:1 c. powdered sugar3 Tbsp. concentrated lemon juice Prick bread while warm and pour glaze on bread.
